While working on a dinner with a green and white theme, I created this really good shrimp cocktail. This recipe is perfect for two.
Ingredients:
10 #16-20 shrimp (look for them firm and pink – get a few extras)
Pesto Sauce (Look in the refrigerated pasta section of your Wal-Mart)
Horseradish (not creamy style)
Sour Cream (The real stuff – the fake stuff tastes like Bill Cosby regurgitated his jello pudding with a dash of lemon juice)
Old Bay Seasoning (All hail the great Old Bay)
Lime Juice
Lemon Juice
Preparing the Shrimp:
Bring about 2 cups of water to a boil and add a liberal amount of Old Bay. Peel and de-vein your shrimp, leaving the tail safely encased in the shell. Boil the shrimp for 3 – 3.5 minutes (this is why you want the extras, to taste). Immediately submerge the shrimp into ice water to stop cooking. Put these into your refrigerator; ice, water, shrimp and all.
Preparing the Sauce:
Use 2 teaspoons of the pesto sauce to 1 teaspoon horseradish. You can adjust this to taste. Add the lime and lemon juice (just a bit – about 2 teaspoons). Mix this all together and refrigerate.
Serving:
Use chilled martini glasses for that extra elegance. Put 1 teaspoon of sour cream in the bottom of the glass, followed by 2 teaspoons of the pesto mixture. Hang those lovely shrimp on the sides.
